Attempted to complete the Dragons Guard Quests. When I used to play I did attempt to get the Dragon scale jacket I thumped dozens of dragons but never did complete it. Most I imagine would take weeks if not months of questing. And to complete them all it seems would be a huge undertaking?
How have you more seasoned warriors fared?

A valid question. Some quests are easier to undertake than others, while some are more beneficial than others. I should say that the below are solely my own opinion through what I've done of them. Grand Fish Oil Project - doable, but only really worth if it you've got lots of coin and fish lying around. Mysterious Goblin Armour - the mystery? it's a mythril helm. you can find them through questing, and not really worth the effort. Noble Trophies - result in swift boots or crystal swift boots, easily one of the most popular quests, since it's the only way to obtain CSB's, considered one of the best items for feet in the game. Queen's Folly - don't bother. Seafarer's Museum - don't bother. Serpent Scale Soup - can be fun to put together if you've got the ingredients already. You can make a fair amount of the soup without too much effort, and it is the best healing item in the game. Tears of a Dragon - the most expensive quest, no doubt. You're right in that it's perhaps the most expensive quest, but when you're killing a couple hundred dragons daily, you can make a few jackets without too much effort. The hard part is getting to the point of being able to do that effortlessly. Some players like to mass-produce DSJ's...and I'm not one of them, just for the time and costs involved. The DSJ is the best armor in the game, so that helps. Gnome Tailor/Titan Blade - only go for these if you're interested in making either a Jaguar Skin Mantle or a Titan Blade. Does that help?
